I tried the foie gras with all the sauces, but for my tastes the association with the berries is sublime. The combination of the smoothness of foie gras and the acidity of the fruit is divine.

This is why I declined this recipe with my three favorite fruits: raspberries, blueberries and mango, both in sauce and with tuiles.
